Abstract: Oxygen is a double edged sword. Normally, our body produces free radicals as we utilize oxygen - so normal that our body has its own defense system that combats these free radicals. But in this society, many factors have been attributed to increase the production of these free radicals. And as we know, if excessive free radicals accumulate in the human body, disease may develop and death may ensure. If the problem is the accumulation of excessive free radicals in the body, we might think s well that the solution is to increase the natural defense of our body - the antioxidant. we can increase antioxidant level in human body by digesting foods that contain high antioxidant level. In this research, DPPH was used to determine antioxidant level of mango, caimito, banana and papaya. This method is a rapid, simple and inexpensive method to measure antioxidant capacity of food. It involves the use of the free radical 2.2-Diphenyl-1-picrylhydrazyl (DPPH), which tests the ability of compounds to act as free radical scavengers or hydrogen donors, and to evaluate antioxidant activity of foods. Research result shows that mango has the highest antioxidant activity followed by caimito, banana and papaya. This suggest that different fruits contain different antioxidant, thus it is important to know the antioxidant, thus it is important to know the antioxidant content of the foods. |
